Donuts with a soft, chewy, mochi-like texture, paired with Asian flavours

Vegan and gluten free, Total time 40 minutes / 15 minutes active time / 25 minutes frying time

Mochi donuts, otherwise known as Pon de Ring were invented by Mister Donut in Japan. These donuts are characterised by their cute shape and have become super popular over the last couple of years. Now there are so many different variations of these on the internet as people try to recreate them!

Recipe

Ingredients (for 4 donuts)

  • 100g soft tofu
  • 25g brown sugar
  • 15g vegetable oil
  • 30g tapioca starch
  • 70g sweet rice flour
  • 1 tsp baking powder
  • additional oil for deep-frying

Toppings

  • red bean paste
  • black sesame, ground into powder
  • roasted soybeans powder
  • icing sugar

How it's done

  1. Add all dough ingredients to a bowl, starting with the wet ingredients, and knead well.
  2. Divide the dough into 4 parts. Divide each part into 7 pieces.
  3. Form the dough pieces into little balls and place them on 4 parchment paper squares (ca. 10cm x 10cm) in a circle shape, 7 balls each.

  1. In a pan, bring the oil for deep-frying to a heat of 160-170° C.
  2. Slide the donuts sitting on the parchment paper into the oil.
  3. Fry the donuts for about 5-7 minutes until golden brown. The parchment paper can be removed as soon as the donuts start floating.

  1. Coat the donuts with the toppings of your choice.
